This pan has completely changed the way I cook. It heats quickly and evenly, and the evaporation technology really makes a difference. Vegetables stay crisp, meats develop a beautiful crust, and foods taste more flavorful because excess moisture disappears instead of steaming the ingredients. This is my 3rd pan. I started with a small one just to test it. And the result is so good that I got the 10" pan. I sometime leave it in the oven to try/store. One time my daughter accidentally turned on the oven to pre-heat and was very worried. But no problem, because it is oven safe!! I finally got the deep pan so I can stir fry more dishes. I love it that it is cast iron so it cook great food but it is light enough I can pick with one hand. Here my son making crispy rice to top it with spicy salmon later. Yum!!!

I find that out of the box, the sear was great for steak and chicken. However, I followed directions for eggs and it still sticks. I am told I'm not using enough butter/oil but it's not worth the extra calories for this purpose. Will stick with non toxic ceramic non stick for eggs (works perfectly and use this for meats.
